These are the meats best in this case: chickens200 fattened on wheat, and yolks of eggs are good here, and a custard201 made of them with a little wine. Capons are good fattened on wheat; partridges, and pheasants,202 and lean pork. Averroes says, the latter is most nourishing, but only give a little of it, well pounded and well chewed.203 Give especially the meat of the back, a little of which is good along with bread.
